- 2 racks of beef or lamb ribs
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup (240 ml) ketchup
- 2 tablespoons honey
- 1 tablespoon vinegar
- 1 teaspoon mustard
- 1/2 teaspoon smoked paprika
- Optional: chili flakes (for heat)
- Optional: brown sugar (for sweetness)
- Optional: lemon juice (for tanginess)
Instructions
- Preheat to 300°F (150°C). Remove membrane from ribs and pat dry.
- Rub olive oil over ribs, then coat with paprika, garlic powder, onion powder, salt, and pepper.
- Let ribs rest for at least 30 minutes.
- Place ribs on a baking tray, cover with foil, and bake for 2.5–3 hours until tender.
- Mix ketchup, honey, vinegar, mustard, and smoked paprika.
- Brush ribs generously with BBQ sauce.
- Return to oven or grill uncovered for 10–15 minutes until caramelized.
