Ingredients

  • 23 cups cooked chicken (shredded or chopped)
  • ¾1 cup BBQ sauce (vegetarian-friendly)
  • 1 small onion (diced)
  • 1 bell pepper (diced)
  • 1 cup corn (fresh, canned, or frozen)
  • 1 can diced tomatoes (optional)
  • 12 cups shredded cheddar cheese
  • 1 cup cornmeal (or boxed cornbread mix)
  • ½1 cup flour (if making from scratch)
  • 1 egg
  • ½1 cup milk
  • ¼ cup butter or oil
  • 12 tbsp sugar
  • 1 tsp baking powder

Instructions

  1. Preheat oven to 375–400°F (190–200°C). Grease a 9×13-inch baking dish.
  2. Sauté onion and bell pepper in a skillet until translucent.
  3. Add cooked chicken, BBQ sauce, corn, and tomatoes. Cook until heated through.
  4. Stir in half the cheddar cheese and transfer mixture to the baking dish.
  5. In a separate bowl, mix cornmeal, flour, sugar, baking powder, egg, milk, and oil until smooth.
  6. Pour cornbread batter evenly over the chicken mixture.
  7. Top with remaining cheddar cheese.
