- 2–3 cups cooked chicken (shredded or chopped)
- ¾–1 cup BBQ sauce (vegetarian-friendly)
- 1 small onion (diced)
- 1 bell pepper (diced)
- 1 cup corn (fresh, canned, or frozen)
- 1 can diced tomatoes (optional)
- 1–2 cups shredded cheddar cheese
- 1 cup cornmeal (or boxed cornbread mix)
- ½–1 cup flour (if making from scratch)
- 1 egg
- ½–1 cup milk
- ¼ cup butter or oil
- 1–2 tbsp sugar
- 1 tsp baking powder
Instructions
- Preheat oven to 375–400°F (190–200°C). Grease a 9×13-inch baking dish.
- Sauté onion and bell pepper in a skillet until translucent.
- Add cooked chicken, BBQ sauce, corn, and tomatoes. Cook until heated through.
- Stir in half the cheddar cheese and transfer mixture to the baking dish.
- In a separate bowl, mix cornmeal, flour, sugar, baking powder, egg, milk, and oil until smooth.
- Pour cornbread batter evenly over the chicken mixture.
- Top with remaining cheddar cheese.
