- 1 cup glutinous rice flour
- 1/4 cup cornstarch
- 1/4 cup granulated sugar
- 1 cup milk
- 1 tablespoon oil or melted butter
- 1 tablespoon dragon fruit juice
- 2 medium bananas
- 1 cup coconut flakes
Instructions
- In a mixing bowl, combine glutinous rice flour, cornstarch, and granulated sugar. Gradually add milk until smooth.
- Pour batter into a greased dish, cover it, and steam for about 20 minutes until firm and translucent.
- Once cooled, mix in oil or melted butter, kneading until smooth and even.
- Dust hands with cornstarch, shape the dough into discs, place banana in center, and seal as dumplings.
- Roll each mochi in coconut flakes until fully coated.
- Optionally dust with powdered sugar or drizzle with chocolate before serving.
