- 1/4 teaspoon salt (Enhances all flavors beautifully.)
- 1 ripe but not overripe banana, sliced (Choose a firm banana for best results.)
- 6 pieces day-old croissants, cut or torn into 1-2 inch pieces (Stale croissants soak up the custard perfectly.)
- Maple syrup (Optional based on your preference.)
Instructions
- Preheat your oven to 350°F (175°C) and coat an 8 x 8-inch baking dish with cooking spray.
- In a mixing bowl, whisk together whole milk, heavy cream, eggs, sugar, vanilla extract, banana extract, and salt until smooth.
- Add the croissant pieces to the custard mixture and fold gently. Allow to soak for 25-30 minutes, stirring halfway through.
- Gently fold in the sliced banana to ensure even distribution.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 45-50 minutes until lightly golden on top and the custard is set but still soft in the middle.
- Let the casserole rest for about 10 minutes before serving.
- Slice the casserole, serve warm with maple syrup if desired.
