- 2 ripe bananas
- 4 tablespoons unsalted butter
- 1/2 cup brown sugar
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 tablespoons heavy cream
- 1/3 cup chopped walnuts or pecans (optional)
Instructions
- Mash the ripe bananas in a bowl until mostly smooth.
- Add the mashed bananas, butter, and brown sugar to a saucepan over medium-low heat.
- Stir until the butter melts and the sugar dissolves, then cook for 3 to 4 minutes.
- Remove the banana mixture from the heat and let it cool completely.
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar, vanilla extract, salt, and heavy cream, then beat until creamy and fluffy.
- Fold the cooled banana mixture into the cream cheese mixture until smooth and fully combined.
- Stir in the chopped walnuts or pecans if using.
- Chill the filling for 30 to 60 minutes before spreading between cake layers or piping into cupcakes.
