- 4 (6-ounce) salmon fillets, skin-on or skinless
- 1 pound fresh broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
- Lemon wedges, for serving (optional)
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- 1/4 cup fresh chives, finely chopped
- Zest of 1 lemon
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 cup extra virgin olive oil
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the baking sheet by lining it with parchment paper or aluminum foil.
- Toss the broccoli florets with 1 tablespoon of olive oil, garlic powder, paprika, and a pinch of salt and black pepper.
- Arrange the seasoned broccoli on one side of the prepared baking sheet. Roast in the oven for 10 minutes.
- Season the salmon fillets on both sides with salt, black pepper, and the remaining olive oil.
- After the broccoli has roasted for 10 minutes, place the salmon fillets skin-side down on the other side of the sheet.
- Return the baking sheet to the oven and roast for an additional 12-15 minutes.
- Prepare the lemon herb sauce by whisking together the parsley, dill, chives, lemon zest, lemon juice, Dijon mustard, and the remaining olive oil.
- When the salmon is cooked through and the broccoli is tender, remove the baking sheet from the oven.
- Serve the salmon and broccoli drizzled with the lemon herb sauce and garnish with lemon wedges.
