  • 4 (6-ounce) salmon fillets, skin-on or skinless
  • 1 pound fresh broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • Lemon wedges, for serving (optional)
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh chives, finely chopped
  • Zest of 1 lemon
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baking sheet by lining it with parchment paper or aluminum foil.
  3. Toss the broccoli florets with 1 tablespoon of olive oil, garlic powder, paprika, and a pinch of salt and black pepper.
  4. Arrange the seasoned broccoli on one side of the prepared baking sheet. Roast in the oven for 10 minutes.
  5. Season the salmon fillets on both sides with salt, black pepper, and the remaining olive oil.
  6. After the broccoli has roasted for 10 minutes, place the salmon fillets skin-side down on the other side of the sheet.
  7. Return the baking sheet to the oven and roast for an additional 12-15 minutes.
  8. Prepare the lemon herb sauce by whisking together the parsley, dill, chives, lemon zest, lemon juice, Dijon mustard, and the remaining olive oil.
  9. When the salmon is cooked through and the broccoli is tender, remove the baking sheet from the oven.
  10. Serve the salmon and broccoli drizzled with the lemon herb sauce and garnish with lemon wedges.
