Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups finely chopped pecans (plus extra for topping)
  • 2 cups white chocolate melting wafers or chips
  • 1 teaspoon coconut oil or shortening (optional)

Instructions

  1. Beat the softened cream cheese and powdered sugar together until smooth and lump-free.
  2. Stir in the vanilla extract and finely chopped pecans until the mixture becomes thick.
  3. Roll the mixture into small balls and place them on a parchment-lined tray.
  4. Freeze the truffle balls for 15–20 minutes to help them firm up for dipping.
  5. Melt the white chocolate using a double boiler or in the microwave, stirring frequently. Add coconut oil if needed.
  6. Dip each chilled truffle into the melted chocolate, place on parchment paper, and sprinkle with chopped pecans.
  7. Refrigerate until the coating is fully firm and ready to serve.
