- 4 fillets cod
- 2 tbsp avocado oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- ¼ cup soy sauce or tamari
- 1 tbsp rice vinegar
- 1 tbsp erythritol
- 1 tsp sesame oil
- ½ tsp red pepper flakes
- 4 cups bok choy, chopped
- ¼ cup green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the ginger and garlic in a large ovenproof skillet with avocado oil over medium-high heat for 1-2 minutes until fragrant.
- Sear the cod fillets in the skillet for approximately 2 minutes on each side until they develop a light crust. Remove and set aside.
- Whisk together soy sauce, rice vinegar, erythritol, sesame oil, and red pepper flakes in the skillet.
- Add the chopped bok choy to the skillet, tossing it in the sauce until slightly wilted.
- Return the cod fillets to the skillet on top of the bok choy.
- Transfer the skillet to the oven and braise for 12-15 minutes, until the cod is fully cooked.
- Garnish with sliced green onions and sesame seeds before serving.
