  • 4 lbs Bone-In Beef Short Ribs
  • 1 tbsp Kosher Salt
  • 1 tsp Black Pepper
  • 2 tbsp Neutral Oil
  • 1/2 cup Low-Sodium Soy Sauce
  • 1/4 cup Dark Soy Sauce
  • 1/4 cup Brown Sugar
  • 1/4 cup Mirin
  • 2 tbsp Rice Vinegar
  • 1 cup Low-Sodium Beef Broth
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 tbsp Toasted Sesame Oil
  • 2 tbsp Cornstarch
  • 2 cups Steamed White Rice
  • 2 tbsp Toasted White Sesame Seeds
  • 2 tbsp Green Onions

Instructions

  1. Pat the bone-in beef short ribs dry with paper towels, then season generously with kosher salt and black pepper.
  2. In a Dutch oven, heat neutral oil over medium-high heat. Sear the ribs for 3-4 minutes on each side.
  3. Once browned, remove the ribs and lower the heat. Add low-sodium beef broth to deglaze the pot.
  4. In a bowl, whisk together low-sodium soy sauce, dark soy sauce, brown sugar, mirin, rice vinegar, minced garlic, grated ginger, and toasted sesame oil.
  5. Return the ribs to the pot, cover tightly, and braise in a preheated oven at 325°F (165°C) for 2.5 to 3 hours.
  6. Once tender, transfer the ribs to a baking sheet, skim off excess fat, and stir in a cornstarch slurry.
  7. Brush the thickened glaze over the ribs and broil on high for 3-5 minutes.
  8. Serve the ribs over warm steamed white rice, drizzled with the remaining glaze and garnished with sesame seeds and green onions.
