- 4 lbs Bone-In Beef Short Ribs
- 1 tbsp Kosher Salt
- 1 tsp Black Pepper
- 2 tbsp Neutral Oil
- 1/2 cup Low-Sodium Soy Sauce
- 1/4 cup Dark Soy Sauce
- 1/4 cup Brown Sugar
- 1/4 cup Mirin
- 2 tbsp Rice Vinegar
- 1 cup Low-Sodium Beef Broth
- 4 cloves Garlic
- 1 inch Ginger
- 1 tbsp Toasted Sesame Oil
- 2 tbsp Cornstarch
- 2 cups Steamed White Rice
- 2 tbsp Toasted White Sesame Seeds
- 2 tbsp Green Onions
Instructions
- Pat the bone-in beef short ribs dry with paper towels, then season generously with kosher salt and black pepper.
- In a Dutch oven, heat neutral oil over medium-high heat. Sear the ribs for 3-4 minutes on each side.
- Once browned, remove the ribs and lower the heat. Add low-sodium beef broth to deglaze the pot.
- In a bowl, whisk together low-sodium soy sauce, dark soy sauce, brown sugar, mirin, rice vinegar, minced garlic, grated ginger, and toasted sesame oil.
- Return the ribs to the pot, cover tightly, and braise in a preheated oven at 325°F (165°C) for 2.5 to 3 hours.
- Once tender, transfer the ribs to a baking sheet, skim off excess fat, and stir in a cornstarch slurry.
- Brush the thickened glaze over the ribs and broil on high for 3-5 minutes.
- Serve the ribs over warm steamed white rice, drizzled with the remaining glaze and garnished with sesame seeds and green onions.
