- 2/3 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 2 1/3 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup apricot preserves or jam
- 1/2 cup finely chopped dried apricots (optional)
Instructions
- Preheat your oven to 325°F (165°C) and line a 9×13 inch baking pan with parchment paper.
- In a mixing bowl, cream together the butter, sugar, vanilla extract, and salt until well blended.
- Gradually add the flour and mix until a crumbly dough forms.
- Press about two-thirds of the shortbread mixture into the bottom of the baking pan to form the crust.
- Spread the apricot preserves evenly over the crust. If the preserves are too thick, warm them slightly in the microwave.
- Sprinkle the remaining shortbread mixture over the apricot layer, creating a streusel-style topping.
- Bake for 30-35 minutes or until the topping is golden and the edges are lightly browned.
- Let the bars cool completely before cutting into squares and serving.
