- 1 1/3 cups all-purpose flour
- 10 tbsp unsalted butter (chilled, diced)
- 5 tbsp sugar
- 1/2 tsp salt
- 1/4 cup toasted almonds (finely ground)
- 1 large egg
- 1/8 tsp salt
- 1/2 tsp lemon zest
- 2 tbsp brown sugar
- 1 tsp vanilla extract
- 1 tbsp flour
- 1/2 cup heavy cream
- 2 lbs fresh apricots (halved, pitted)
- 1 tbsp almond flour
- 1/4 cup apricot preserves
- 3 tbsp water
Instructions
- Preheat oven to 350°F (175°C)
- Toast almonds for 5–7 minutes until golden, then cool and grind finely
- Combine flour, sugar, 1/2 tsp salt, and ground almonds in a bowl
- Cut in chilled butter until dough forms
- Press dough into a tart pan, bake for 20–25 minutes until golden
- In a bowl, whisk egg, brown sugar, lemon zest, 1 tbsp flour, almond flour, vanilla, and heavy cream; spread over cooled crust
- Bake for 15–20 minutes until filling is set
- In a saucepan, heat apricot preserves and water until glossy; brush over tart
- Cool completely before serving
