Ingredients

  • 1 1/3 cups all-purpose flour
  • 10 tbsp unsalted butter (chilled, diced)
  • 5 tbsp sugar
  • 1/2 tsp salt
  • 1/4 cup toasted almonds (finely ground)
  • 1 large egg
  • 1/8 tsp salt
  • 1/2 tsp lemon zest
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp flour
  • 1/2 cup heavy cream
  • 2 lbs fresh apricots (halved, pitted)
  • 1 tbsp almond flour
  • 1/4 cup apricot preserves
  • 3 tbsp water

Instructions

  1. Preheat oven to 350°F (175°C)
  2. Toast almonds for 5–7 minutes until golden, then cool and grind finely
  3. Combine flour, sugar, 1/2 tsp salt, and ground almonds in a bowl
  4. Cut in chilled butter until dough forms
  5. Press dough into a tart pan, bake for 20–25 minutes until golden
  6. In a bowl, whisk egg, brown sugar, lemon zest, 1 tbsp flour, almond flour, vanilla, and heavy cream; spread over cooled crust
  7. Bake for 15–20 minutes until filling is set
  8. In a saucepan, heat apricot preserves and water until glossy; brush over tart
  9. Cool completely before serving
