- 1 cup finely chopped peeled apples (about 1 medium apple)
- For the cinnamon-sugar coating:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the chopped apples.
- In a small bowl, combine the 1/4 cup granulated sugar and 1 teaspoon cinnamon for the coating.
- Roll rounded tablespoons of dough into balls.
- Roll each dough ball in the cinnamon-sugar mixture until evenly coated.
- Place the coated dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still soft. For chewy spiced apple snickerdoodles, be careful not to overbake.
