  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the chopped apples.
  7. In a small bowl, combine the 1/4 cup granulated sugar and 1 teaspoon cinnamon for the coating.
  8. Roll rounded tablespoons of dough into balls.
  9. Roll each dough ball in the cinnamon-sugar mixture until evenly coated.
  10. Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  11. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still soft. For chewy spiced apple snickerdoodles, be careful not to overbake.
