Description

Zucchini Ravioli is a fresh, healthy twist on traditional pasta that features tender zucchini slices filled with creamy ricotta cheese. This enticing dish combines vibrant flavors and colors.


Ingredients

  • 2 medium zucchinis
  • 1 cup fresh ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 2 cups marinara sauce (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Prepare zucchinis by slicing off both ends and cutting lengthwise into thin strips (about 1/8 inch thick). Lay on paper towels, sprinkle with salt, and let drain.
  2. In a bowl, mix ricotta cheese, Parmesan cheese, egg, basil, salt, and pepper until smooth.
  3. Rinse salted zucchini under cold water and pat dry. Spoon about a tablespoon of filling onto one end of each strip; fold over and press to seal.
  4. Preheat oven to 375°F (190°C). Arrange ravioli in a greased baking dish, drizzle with olive oil, and cover with marinara sauce.
  5. Bake for 25 minutes or until heated through and bubbly. Serve warm garnished with additional basil or Parmesan.
