- 2 medium zucchinis
- 1 cup fresh ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 2 cups marinara sauce (store-bought or homemade)
- Salt and pepper to taste
Instructions
- Prepare zucchinis by slicing off both ends and cutting lengthwise into thin strips (about 1/8 inch thick). Lay on paper towels, sprinkle with salt, and let drain.
- In a bowl, mix ricotta cheese, Parmesan cheese, egg, basil, salt, and pepper until smooth.
- Rinse salted zucchini under cold water and pat dry. Spoon about a tablespoon of filling onto one end of each strip; fold over and press to seal.
- Preheat oven to 375°F (190°C). Arrange ravioli in a greased baking dish, drizzle with olive oil, and cover with marinara sauce.
- Bake for 25 minutes or until heated through and bubbly. Serve warm garnished with additional basil or Parmesan.
