- 2.5 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 2 tsp kosher salt, divided, plus more to taste
- 2 Tbsp unsalted butter
- 0.5 cup milk (2% preferred)
- 0.5 cup plain Greek yogurt or sour cream (whole milk or low-fat recommended)
- 0.5 tsp garlic powder (optional, but highly recommended)
- Fresh chopped chives or parsley
Instructions
- Place the peeled and chopped potatoes in a large pot. Add 1 teaspoon of kosher salt, then cover with water. Bring the water to a boil over high heat, then reduce the heat to a simmer. Cook until the potatoes are fork-tender and easily break apart, approximately 12 to 15 minutes.
- While the potatoes are cooking, combine the unsalted butter and milk in a small pot on the stovetop or a microwave-safe bowl. Heat gently until the butter is melted and the milk is warm.
- Once the potatoes are cooked, drain them thoroughly in a colander. Return the drained potatoes to the pot and mash them until most large lumps are gone. For an exceptionally smooth consistency, a food mill, food processor, hand mixer, or ricer can be used.
- Pour the warm butter and milk mixture over the mashed potatoes and stir to combine. Fold in the Greek yogurt or sour cream. Season with the remaining 1 teaspoon of kosher salt, garlic powder (if desired), and black pepper to taste. Adjust seasoning as needed before serving.
- Garnish the creamy mashed potatoes with fresh chopped chives or parsley, if desired, and serve immediately while warm.
