Description

Luxuriously creamy and fluffy Yukon Gold potatoes, a comforting side that’s easy to make and universally loved.

Ingredients

Scale
  • 2.5 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 2 tsp kosher salt, divided, plus more to taste
  • 2 Tbsp unsalted butter
  • 0.5 cup milk (2% preferred)
  • 0.5 cup plain Greek yogurt or sour cream (whole milk or low-fat recommended)
  • 0.5 tsp garlic powder (optional, but highly recommended)
  • Fresh chopped chives or parsley

Instructions

  1. Place the peeled and chopped potatoes in a large pot. Add 1 teaspoon of kosher salt, then cover with water. Bring the water to a boil over high heat, then reduce the heat to a simmer. Cook until the potatoes are fork-tender and easily break apart, approximately 12 to 15 minutes.
  2. While the potatoes are cooking, combine the unsalted butter and milk in a small pot on the stovetop or a microwave-safe bowl. Heat gently until the butter is melted and the milk is warm.
  3. Once the potatoes are cooked, drain them thoroughly in a colander. Return the drained potatoes to the pot and mash them until most large lumps are gone. For an exceptionally smooth consistency, a food mill, food processor, hand mixer, or ricer can be used.
  4. Pour the warm butter and milk mixture over the mashed potatoes and stir to combine. Fold in the Greek yogurt or sour cream. Season with the remaining 1 teaspoon of kosher salt, garlic powder (if desired), and black pepper to taste. Adjust seasoning as needed before serving.
  5. Garnish the creamy mashed potatoes with fresh chopped chives or parsley, if desired, and serve immediately while warm.
