  • 1 tablespoon strawberry jam (optional)
  • 1 egg
  • ⅓ cup raisins (or dried cherries)
  • ⅓ cup dried cranberries
  • ⅓ cup dried dates, chopped (approximately 7 pieces)

Instructions

  1. Preheat your oven to 325°F (165°C). Line a standard loaf pan with parchment paper and lightly grease it with baking spray.
  2. In a large bowl, combine the all-purpose flour, baking soda, pine nuts, crushed walnuts, and salt. Stir together and set aside.
  3. In a medium bowl, blend the plain full-fat yogurt, melted unsalted butter, and brown sugar until smooth. Add the dried fruits, strawberry jam if using, and the egg. Mix until well combined.
  4. Pour the wet mixture into the dry ingredients bowl. Gently fold until just combined. Let the batter rest for 3 minutes before transferring it to the prepared loaf pan.
