  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 6 cups beef broth
  • 1 cup dry red wine (optional)
  • 2 tbsp tomato paste
  • 1/4 cup all-purpose flour
  • Salt and black pepper to taste
  • 1 lb baby potatoes, halved
  • 1 cup frozen peas

Instructions

  1. Pat the beef cubes dry and season generously with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, then set aside.
  3. Add the chopped onion, sliced carrots, and sliced celery to the pot. Cook until softened, about 5-7 minutes.
  4. Stir in the minced garlic, dried thyme, and dried rosemary. Cook for 1 minute until fragrant.
  5. Add the tomato paste and cook for another minute.
  6. Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes.
  7. Gradually whisk in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
  8. Return the browned beef to the pot. Add the bay leaf.
  9. Bring the stew to a simmer, then reduce heat to low, cover, and cook for 2 to 2.5 hours, or until the beef is tender.
  10. Add the halved baby potatoes and continue to cook for another 30-45 minutes, or until the potatoes are tender.
  11. Stir in the frozen peas during the last 5 minutes of cooking.
  12. Remove the bay leaf before serving. Season with additional salt and pepper if needed. This Witches Brew Beef Stew is now ready to enjoy.
