- 2 medium zucchinis, grated
- 1 cup sweet corn, fresh or frozen
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs

- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the grated zucchini, sweet corn, and olive oil.
- In another bowl, whisk together the eggs and milk.
- Add the egg mixture to the zucchini and corn mixture.
- In a separate bowl, mix the flour, baking powder, salt, and pepper.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the shredded cheese.
- Pour the mixture into a greased pie dish.
- Bake for 30-35 minutes or until golden brown and set in the center.
- Let cool for a few minutes before slicing and serving.
