  • 2 large eggs

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the grated zucchini, sweet corn, and olive oil.
  3. In another bowl, whisk together the eggs and milk.
  4. Add the egg mixture to the zucchini and corn mixture.
  5. In a separate bowl, mix the flour, baking powder, salt, and pepper.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the shredded cheese.
  8. Pour the mixture into a greased pie dish.
