- 1 tbsp olive oil
- 1 medium onion, diced
- 2 bell peppers, diced (green and red)
- 3 garlic cloves, minced
- 1 pound boneless, skinless chicken breast
- 1 tsp sea salt
- 1 tsp dried oregano
- 1 tsp paprika
- ¼ tsp chili powder
- ½ tbsp cumin
- ½ tsp black pepper
- 1 (15oz) can diced tomatoes
- ½ cup chopped green chilies
- Fresh lime juice from 2 limes
- 4 cups chicken broth
- Freshly chopped cilantro
- Diced red onions
- Lime wedges
- Avocado
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onions, minced garlic, and diced bell peppers. Sauté until the onions become translucent and the bell peppers soften, about 5-7 minutes.
- Place the boneless, skinless chicken breast into the pot along with the diced tomatoes, chopped green chilies, sea salt, dried oregano, paprika, chili powder, cumin, black pepper, chicken broth, and lime juice. Stir gently to combine.
- Bring to a boil over medium-high heat. Once boiling, reduce heat to low and let simmer for about 30 minutes, or until the chicken is thoroughly cooked.
- Remove the chicken breast from the pot and shred it using two forks.
- Return the shredded chicken to the pot and simmer for an additional 5 minutes.
- Ladle the soup into bowls and garnish with cilantro, lime wedges, diced red onions, and avocado. Serve warm.
