Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- In a large mixing bowl, beat together 1 cup of unsalted butter, ½ cup of granulated sugar, and 1 cup of brown sugar until light and fluffy.
- Mix in 2 large eggs, followed by 1 teaspoon of peppermint extract and 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Gently fold in 1 ½ cups of white chocolate chips and ½ cup of crushed peppermint candies (if using).
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
