These White Chocolate Blueberry Blondies are soft, chewy dessert bars made with melted white chocolate, fresh blueberries, and simple pantry ingredients. Perfect for spring and summer gatherings.

- 1 cup (170g) white chocolate chips
- ¾ cup (150g) granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs (room temperature works best)
- 1¼ cups (156g) all-purpose flour
- ¼ teaspoon salt
- 1 cup (148g) fresh blueberries
- Extra ¼ cup white chocolate chips for topping
- 1 teaspoon lemon zest for a citrusy kick
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line your 8×8-inch baking pan with parchment paper, leaving some overhang on the sides.
- Melt the butter in a small saucepan over medium-low heat or in the microwave. Pour it over the white chocolate chips in a medium bowl and let it sit for 2-3 minutes. Whisk until smooth.
- Let the white chocolate mixture cool for 10-15 minutes until slightly thickened but still pourable.
- Whisk in the granulated sugar until well combined.
- Add the vanilla extract and eggs. Whisk until smooth.
- Sprinkle the flour and salt over the wet mixture. Gently fold in until just combined.
- Gently fold in the fresh blueberries.
- Spread the batter evenly into the prepared pan. Sprinkle extra white chocolate chips on top if desired.
- Bake for 35-45 minutes until edges are lightly golden and a toothpick comes out with a few moist crumbs.
- Let the blondies cool completely in the pan for at least 2 hours before slicing.
