This refreshing Watermelon Mint Mocktail is a perfect non-alcoholic drink ideal for hot summer days or any occasion where you want a light, hydrating beverage. Made with fresh watermelon, mint, lime juice, a touch of natural sweetener, and bubbly club soda.

- 3 cups watermelon, cubed and seeds removed
- ¼ cup fresh lime juice
- ½ cup fresh mint leaves, packed
- 1 tbsp honey, agave nectar or maple syrup
- 2 cups club soda
- Ice for glasses
Instructions
- To a blender, add the chopped watermelon, freshly squeezed lime juice, fresh mint leaves, and your sweetener of choice. Blend on high until a juice forms and no large chunks remain.
- Place a small strainer over a large measuring cup or bowl and pour the watermelon juice through the strainer. This will remove any large bits of pulp, ensuring a smooth drink.
- Place some ice in a glass and pour the watermelon juice over top until the glass is about ¾ full. Finish by topping with club soda. Garnish with a lime wedge and a fresh mint sprig. Serve immediately and enjoy!
