- 3 cups cooked shredded chicken
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat the olive oil and butter in a large pot over medium heat.
- Add the diced onion, carrots, and celery, then cook for 5 to 6 minutes until softened.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and add the cauliflower, salt, black pepper, thyme, and dried parsley.
- Bring the soup to a gentle boil, then reduce the heat and simmer for 15 to 18 minutes until the cauliflower and carrots are tender.
- Stir in the shredded chicken and cooked rice, then simmer for 3 to 4 minutes until heated through.
- Lower the heat and stir in the heavy cream and Parmesan cheese until the soup is creamy and smooth.
- Taste and adjust seasoning if needed.
- Ladle into bowls and top with fresh parsley before serving.
