Ingredients

  • 2 cups cooked basmati rice (preferably day-old)
  • 2 medium yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1/2 tsp ground turmeric
  • Salt and pepper to taste
  • 3 oz crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 2 tbsp chopped fresh mint
  • 1/2 lemon, for juice
  • Optional: Dried barberries or dried cherries, toasted walnuts or slivered almonds, Persian yogurt

Instructions

  1. Heat butter and 1 tablespoon olive oil in a skillet over medium heat. Add sliced onions and salt. Cook for 15-20 minutes until deeply golden and caramelized, reducing heat if browning too quickly.
  2. While onions cook, mix cooked rice with turmeric, salt, and remaining olive oil.
  3. Once onions are caramelized, remove half to a plate. Add the seasoned rice to the skillet over the remaining onions. Pat down gently.
  4. Cook undisturbed on medium heat for 6-8 minutes until the bottom is golden and crispy.
  5. Lower heat, cover skillet with a lid or foil, and steam for 5 minutes.
  6. Spoon crispy rice into bowls. Top with reserved caramelized onions, feta cheese, and chopped herbs.
  7. Squeeze fresh lemon juice over the bowls. Add optional barberries, cherries, or nuts if desired.
  8. Serve this warm Persian rice bowl immediately.
