- 2 Eggs (Use room temperature.)
- 1/2 tsp Black Pepper
- 1.5 tsp Salt
- 2 tsp Worcestershire Sauce
- 1/3 cup Ketchup
- 1 tbsp Balsamic Vinegar (For meatloaf.)
- 1 tsp Dijon Mustard
- 1 tbsp Brown Sugar
- 1/2 tsp Garlic Powder
- Grated Carrots
- Bell Peppers
- Red Pepper Flakes (For a spicy kick.)
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the diced onion and minced garlic in olive oil over medium heat until soft, about 4-5 minutes for the onion and 2-3 minutes for the garlic.
- Mix the glaze by combining ketchup, balsamic vinegar, Dijon mustard, and brown sugar in a small bowl. Stir until smooth and set aside.
- Combine breadcrumbs and milk in a large bowl, letting it soak for about 1 minute. Then, add eggs, Worcestershire sauce, Italian seasoning, salt, black pepper, garlic powder, the sautéed onion and garlic, and ground venison. Mix gently until just combined.
- Transfer the meat mixture into a lightly oiled or parchment-lined loaf pan, shaping it evenly.
- Bake the meatloaf in the preheated oven for 45 minutes.
- Glaze the meatloaf with the prepared glaze and bake for an additional 15-20 minutes until the internal temperature reaches 160°F (71°C).
- Rest the meatloaf for 5-10 minutes after baking.
