- 1 cup Dried brown lentils
- 1 cup Vegetable broth
- 2 tablespoons Olive oil
- 1 tablespoon Soy sauce
- 1 cup Chopped celery
- 1 cup Chopped onion
- 1 cup Chopped carrot
- 1 cup Chopped button cremini mushrooms
- 1/2 cup Red wine
- 4 cloves Garlic, minced
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
- 1/2 cup Walnuts
- 1 cup Panko breadcrumbs
- 1/4 cup Parsley
- to taste Sea salt
- to taste Ground black pepper
- 2 tablespoons Butter
- 2 cups Chopped button (cremini) mushrooms
- 1 cup Chopped onion
- 1 cup Vegetable broth
- 2 tablespoons Cornstarch or all-purpose flour
- 1 tablespoon White miso or soy sauce
- 1 teaspoon Oregano
- to taste Sea salt
- to taste Ground black pepper
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Simmer the lentils with vegetable broth in a medium-size saucepan for 25-30 minutes or until the lentils are tender.
- Mix ground flaxseed with water in a small bowl and set aside to thicken up.
- Sauté olive oil, celery, onion, carrot, and mushrooms in a non-stick skillet over medium heat for about 5-7 minutes.
- Add red wine, garlic, soy sauce, thyme, and rosemary. Cook for 2-3 minutes.
- Blend walnuts in a food processor until they reach a breadcrumb consistency.
- Add the cooled lentils, sautéed vegetables, flaxseed mixture, breadcrumbs, parsley, salt, and pepper. Pulse until a dough forms.
- Shape the mixture into 13 equal balls and place them on a greased baking dish.
- Bake for 40-45 minutes, or until browned and crispy.
- Melt butter in a small saucepan over medium heat.
- Add chopped mushrooms and onion, sauté for 5-7 minutes.
- Combine broth with the mushroom mixture, bringing it to a gentle simmer.
- Dissolve cornstarch in water and add to the simmering gravy, stirring continuously.
- Season gravy by adding soy sauce, miso, and oregano.
- Simmer for another 6-8 minutes until thickened. Blend until smooth.
- Serve meatballs on plates and pour mushroom gravy over them.
