Ingredients

  • 1 cup Dried brown lentils
  • 1 cup Vegetable broth
  • 2 tablespoons Olive oil
  • 1 tablespoon Soy sauce
  • 1 cup Chopped celery
  • 1 cup Chopped onion
  • 1 cup Chopped carrot
  • 1 cup Chopped button cremini mushrooms
  • 1/2 cup Red wine
  • 4 cloves Garlic, minced
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1/2 cup Walnuts
  • 1 cup Panko breadcrumbs
  • 1/4 cup Parsley
  • to taste Sea salt
  • to taste Ground black pepper
  • 2 tablespoons Butter
  • 2 cups Chopped button (cremini) mushrooms
  • 1 cup Chopped onion
  • 1 cup Vegetable broth
  • 2 tablespoons Cornstarch or all-purpose flour
  • 1 tablespoon White miso or soy sauce
  • 1 teaspoon Oregano
  • to taste Sea salt
  • to taste Ground black pepper

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Simmer the lentils with vegetable broth in a medium-size saucepan for 25-30 minutes or until the lentils are tender.
  3. Mix ground flaxseed with water in a small bowl and set aside to thicken up.
  4. Sauté olive oil, celery, onion, carrot, and mushrooms in a non-stick skillet over medium heat for about 5-7 minutes.
  5. Add red wine, garlic, soy sauce, thyme, and rosemary. Cook for 2-3 minutes.
  6. Blend walnuts in a food processor until they reach a breadcrumb consistency.
  7. Add the cooled lentils, sautéed vegetables, flaxseed mixture, breadcrumbs, parsley, salt, and pepper. Pulse until a dough forms.
  8. Shape the mixture into 13 equal balls and place them on a greased baking dish.
  9. Bake for 40-45 minutes, or until browned and crispy.
  10. Melt butter in a small saucepan over medium heat.
  11. Add chopped mushrooms and onion, sauté for 5-7 minutes.
  12. Combine broth with the mushroom mixture, bringing it to a gentle simmer.
  13. Dissolve cornstarch in water and add to the simmering gravy, stirring continuously.
  14. Season gravy by adding soy sauce, miso, and oregano.
  15. Simmer for another 6-8 minutes until thickened. Blend until smooth.
  16. Serve meatballs on plates and pour mushroom gravy over them.
