- For the Almond Meal Crust:
- 2 cups almond meal
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- For the Blueberry Filling:
- 5 cups fresh or frozen blueberries
- 1/3 cup pure maple syrup, adjust to taste
- 3 tablespoons cornstarch or arrowroot powder
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- Pinch of sea salt
- Optional Topping:
- 1/4 cup sliced almonds
- 1 tablespoon maple syrup for brushing
- Coconut whipped cream or vegan vanilla ice cream for serving
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch tart or pie pan.
- Make the almond meal crust: In a bowl, combine almond meal, melted coconut oil, maple syrup, vanilla extract, and sea salt. Mix until crumbly.
- Press the crust mixture firmly into the prepared pan, covering the bottom and sides. Use a measuring cup to compact it.
- Bake the crust for 10–12 minutes until golden. Let it cool slightly.
- Prepare the blueberry filling: In a saucepan, combine blueberries, maple syrup, cornstarch, lemon juice, lemon zest, vanilla extract, and salt.
- Cook over medium heat, stirring constantly, for 8–10 minutes until the filling thickens to a jam-like consistency.
- Pour the blueberry filling into the pre-baked crust.
- If using, sprinkle sliced almonds on top and brush them with maple syrup.
- Bake for another 20–25 minutes until the filling is bubbly and the crust is browned. Shield edges with foil if needed.
- Cool the pie completely on a rack. Refrigerate for at least 2 hours for the filling to set.
- Serve chilled or at room temperature, with coconut whipped cream or vegan vanilla ice cream if desired.
Notes
- Almond meal provides more texture than almond flour for the crust.
- If using frozen blueberries, do not thaw them before using.
- Adjust maple syrup in the filling to your preferred sweetness.
- For best results, chill the pie for at least 2 hours before slicing.
