  • 5 cups fresh or frozen blueberries
  • 1/3 cup pure maple syrup, adjust to taste
  • 3 tablespoons cornstarch or arrowroot powder
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional Topping:
  • 1/4 cup sliced almonds
  • 1 tablespoon maple syrup for brushing
  • Coconut whipped cream or vegan vanilla ice cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch tart or pie pan.
  2. Make the almond meal crust: In a bowl, combine almond meal, melted coconut oil, maple syrup, vanilla extract, and sea salt. Mix until crumbly.
  3. Press the crust mixture firmly into the prepared pan, covering the bottom and sides. Use a measuring cup to compact it.
  4. Bake the crust for 10–12 minutes until golden. Let it cool slightly.
  5. Prepare the blueberry filling: In a saucepan, combine blueberries, maple syrup, cornstarch, lemon juice, lemon zest, vanilla extract, and salt.
  6. Cook over medium heat, stirring constantly, for 8–10 minutes until the filling thickens to a jam-like consistency.
  7. Pour the blueberry filling into the pre-baked crust.
  8. If using, sprinkle sliced almonds on top and brush them with maple syrup.
  9. Bake for another 20–25 minutes until the filling is bubbly and the crust is browned. Shield edges with foil if needed.
  10. Cool the pie completely on a rack. Refrigerate for at least 2 hours for the filling to set.
  11. Serve chilled or at room temperature, with coconut whipped cream or vegan vanilla ice cream if desired.
