Ingredients

  • 1 cup Fresh or Frozen Blueberries
  • 2 cups Unsweetened Almond Milk
  • 12 tablespoons Maple Syrup or Agave Nectar
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1 cup Additional Blueberries
  • Nuts or Seeds (Almonds, walnuts, or pumpkin seeds)
  • Coconut Flakes
  • Dark Chocolate Shavings (Optional)

Instructions

  1. Start by measuring out 4 tablespoons of chia seeds and add them to a mixing bowl.
  2. Next, take 1 cup of fresh or frozen blueberries and toss them in with the chia seeds.
  3. Carefully pour 2 cups of unsweetened almond milk into the bowl.
  4. Add 1 to 2 tablespoons of maple syrup or agave nectar to the almond milk mixture.
  5. Stir in 1 teaspoon of vanilla extract.
  6. Sprinkle in a pinch of salt.
  7. Give everything a good stir until well combined.
  8. Allow the mixture to sit for at least 10-15 minutes.
  9. After resting, stir again for an even consistency.
  10. Portion out the pudding into small mason jars or bowls.
  11. Refrigerate for a few hours or overnight to set.
  12. Before serving, top your pudding with additional blueberries and toppings of your choice.
