- 4 tablespoons Chia Seeds
- 1 cup Fresh or Frozen Blueberries
- 2 cups Unsweetened Almond Milk
- 1–2 tablespoons Maple Syrup or Agave Nectar
- 1 teaspoon Vanilla Extract
- 1 pinch Salt
- 1 cup Additional Blueberries
- Nuts or Seeds (Almonds, walnuts, or pumpkin seeds)
- Coconut Flakes
- Dark Chocolate Shavings (Optional)
Instructions
- Start by measuring out 4 tablespoons of chia seeds and add them to a mixing bowl.
- Next, take 1 cup of fresh or frozen blueberries and toss them in with the chia seeds.
- Carefully pour 2 cups of unsweetened almond milk into the bowl.
- Add 1 to 2 tablespoons of maple syrup or agave nectar to the almond milk mixture.
- Stir in 1 teaspoon of vanilla extract.
- Sprinkle in a pinch of salt.
- Give everything a good stir until well combined.
- Allow the mixture to sit for at least 10-15 minutes.
- After resting, stir again for an even consistency.
- Portion out the pudding into small mason jars or bowls.
- Refrigerate for a few hours or overnight to set.
- Before serving, top your pudding with additional blueberries and toppings of your choice.
