These crispy vegan air fryer falafels transform a Middle Eastern classic into a healthier treat without sacrificing texture or flavor.

- 1 cup dried chickpeas
- 1 small onion
- 2 cloves garlic
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground turmeric
- 1 teaspoon baking powder
Instructions
- Place dried chickpeas in a large pot, cover with water, and bring to a gentle simmer. Turn off the heat, cover, and let sit for at least 12 hours until they double in size.
- Drain the soaked chickpeas thoroughly. Divide them in half, then pulse the first batch in a food processor until coarsely ground.
- Add the second half of chickpeas with the onion, garlic, herbs, and all spices. Pulse until finely ground but not pasty.
- Transfer to a large bowl, stirring thoroughly. Chill in the refrigerator for at least 45 minutes.
- Add baking powder to the chilled mixture and gently fold it in.
- Scoop the mixture using an ice cream scoop for consistency, then flatten slightly into patties.
- Preheat the air fryer to 400°F and lightly spray the basket. Arrange the falafel patties and air fry for about 10 minutes before flipping and cooking another 8-10 minutes.
- Serve while the contrast between the crunchy exterior and steamy interior is at its peak.
