Ingredients
- For the Crust:
- 1 ½ cups graham cracker crumbs
- ⅓ cup melted butter
- ¼ cup granulated sugar
- For the Custard:
- 2 cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- 5 large egg yolks
- 2 teaspoons vanilla extract
- 2 tablespoons cornstarch (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press evenly into the pan for the crust.
- Bake the crust for 8-10 minutes until set and golden. Let it cool.
- In a saucepan, heat whole milk and heavy cream over medium heat until simmering.
- In a separate bowl, whisk egg yolks, ¾ cup sugar, and cornstarch (if using) until smooth.
- Temper the eggs by slowly pouring about 1 cup of the hot milk mixture into the egg yolk mixture while whisking constantly.
- Pour the tempered egg mixture back into the saucepan with the remaining milk.
- Cook over medium heat, stirring constantly, until the custard thickens enough to coat a spoon (about 5-7 minutes).
- Remove from heat and stir in the vanilla extract.
- Pour the hot custard over the cooled crust and spread evenly.
- Cover with plastic wrap, pressing it directly onto the custard surface.
- Refrigerate for at least 4 hours, or preferably overnight, until fully set.
- Cut into squares with a sharp knife and serve chilled.
