- 2 1/4 cups all-purpose flour (280g)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened (170g)
- 3/4 cup granulated sugar (150g)
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- Seeds scraped from 1 vanilla bean (or 1 teaspoon vanilla bean paste)
- 2 cups powdered sugar (240g)
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Green food coloring
Instructions
- Whisk together flour, baking powder, and salt. Set aside.
- Beat softened butter and sugar until light and fluffy, about 2–3 minutes.
- Mix in egg, vanilla extract, and vanilla bean seeds until fully incorporated.
- Gradually add dry ingredients to wet mixture and mix just until combined. Do not overmix.
- Divide dough into discs, wrap, and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness and cut into shamrock shapes.
- Place on lined baking sheets and bake 8–10 minutes until edges are lightly golden.
- Allow cookies to cool completely before decorating.
- Whisk powdered sugar, milk, and vanilla extract to make icing. Add green food coloring and decorate as desired. Let icing set before stacking.
