Instructions
- Thinly slice cucumbers using a sharp knife or mandoline.
- Dice avocado and shred imitation crab.
- In a large bowl, add cucumbers, avocado, and crab.
- In a small bowl, whisk sesame oil, rice vinegar, soy sauce, and sesame seeds.
- Pour dressing over salad and gently toss to combine without mashing avocado.
- Add salt and pepper to taste. Chill for 10–15 minutes if desired, then serve.
