- 4 cups Chicken Stock/Broth (vegetable broth for vegetarian version)
- 1 cup Milk (heavy cream optional for richer texture)
- 8 oz Cream Cheese (cubed for creaminess)
- 1 cup Shredded Mozzarella (try cheddar as an alternative)
- 1/2 cup Breadcrumbs (consider gluten-free if necessary)
Instructions
- Heat a large stock pot over medium heat, add ground pork, and cook for about 5–7 minutes until browned. Drain excess fat.
- Add chopped onion, banana peppers, and minced garlic to the pot. Season with salt, pepper, cayenne, Worcestershire sauce, and Italian seasoning. Cook for about 5–7 minutes until softened.
- Sprinkle all-purpose flour over the sautéed mixture, stirring well. Gradually pour in chicken stock and milk, bringing to a simmer. Reduce heat and simmer for 10 minutes to thicken.
- Stir in the cubed cream cheese until melted and combined. Taste and adjust seasoning.
- Ladle soup into bowls and top with shredded mozzarella and breadcrumbs. Optionally broil for 2–4 minutes until golden brown.
