Instructions
- Preheat oven to 375°F (190°C) and line muffin pan with paper liners.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix egg, milk, melted butter, and vanilla until combined.
- Pour wet ingredients into dry ingredients and stir gently until moistened; fold in chopped apples.
- For streusel topping: Combine flour, brown sugar, cinnamon, and cold butter; mix until crumbly.
- Divide muffin batter among cups and sprinkle streusel on top.
- Bake for 18-22 minutes or until a skewer comes out clean. Let cool before serving.
