Delicious Ube Cookies and Cream Cookies to Satisfy Your Cravings

- 2 cups all-purpose flour (sifted)
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter (melted)
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1 cup ube halaya (purple yam spread)
- 1 teaspoon ube extract
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup Oreos (broken into pieces)
Instructions
- In a medium-sized bowl, whisk the all-purpose flour, baking soda, and kosher salt together until well-combined.
- In a large bowl, whisk the melted unsalted butter with light brown sugar and granulated sugar until smooth. Add the ube halaya, ube extract, vanilla extract, and the egg; whisk until perfectly blended.
- Gently add the dry ingredients to the wet mixture. Fold until almost combined.
- Add in broken Oreo chunks, folding them into the dough until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate the dough for about one hour.
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Use a cookie scoop or your hands to form the dough into 2-tablespoon sized balls and place them on the prepared baking sheets.
- Bake for about 11 minutes until the edges are just golden. Let cool briefly before transferring to a wire rack.
