Ingredients

  • 2 cups all-purpose flour (sifted)
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 cup ube halaya (purple yam spread)
  • 1 teaspoon ube extract
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup Oreos (broken into pieces)

Instructions

  1. In a medium-sized bowl, whisk the all-purpose flour, baking soda, and kosher salt together until well-combined.
  2. In a large bowl, whisk the melted unsalted butter with light brown sugar and granulated sugar until smooth. Add the ube halaya, ube extract, vanilla extract, and the egg; whisk until perfectly blended.
  3. Gently add the dry ingredients to the wet mixture. Fold until almost combined.
  4. Add in broken Oreo chunks, folding them into the dough until evenly distributed.
  5. Cover the bowl with plastic wrap and refrigerate the dough for about one hour.
  6. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  7. Use a cookie scoop or your hands to form the dough into 2-tablespoon sized balls and place them on the prepared baking sheets.
  8. Bake for about 11 minutes until the edges are just golden. Let cool briefly before transferring to a wire rack.
