- 2 tablespoons olive oil
- 1 onion, diced
- 3 carrots, peeled and diced
- 3 celery stalks, diced
- 4 garlic cloves, minced
- 2 (15-ounce) cans white beans, rinsed and drained
- 4 cups low-sodium chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are tender.
- Stir in the minced garlic and cook for an additional minute, until fragrant.
- Add the rinsed and drained white beans, chicken or vegetable broth, dried thyme, dried rosemary, and dried oregano. Season with salt and black pepper to taste.
- Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have blended and the soup has thickened slightly.
- Serve the Tuscan White Bean Soup hot, topped with grated Parmesan cheese if desired. Enjoy with crusty bread for a complete meal.
