Description

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion finely chopped
  • 2 celery stalks diced
  • 2 large carrots diced
  • 3 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 1/2 cup dry white wine
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon freshly ground black pepper
  • 6 cups turkey or chicken stock
  • 2 cups cooked wild rice
  • 2 cups cooked shredded turkey
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • Chopped parsley or tarragon for garnish (optional)

Instructions

  1. Prepare all ingredients: chop vegetables, cook wild rice, and shred turkey.
  2. Heat olive oil and butter in a Dutch oven over medium heat. Sauté onion, carrots, and celery until softened (6-8 minutes). Add garlic and mushrooms, cook for 5 more minutes until mushrooms release liquid and brown slightly.
  3. Pour in white wine, scraping up bits from the pot bottom. Simmer for 2-3 minutes to cook off alcohol and concentrate flavor.
  4. Add dried tarragon, thyme, pepper, and salt. Stir, then add turkey or chicken stock. Bring to a gentle boil, then reduce heat to simmer. Cook uncovered for 15 minutes.
  5. Stir in cooked wild rice and shredded turkey. Simmer for another 10-15 minutes to meld flavors.
  6. Reduce heat to low. Stir in heavy cream and lemon juice. Taste and adjust seasoning. Mash some rice against the pot side if a thicker soup is desired.
  7. Ladle soup into bowls, garnish with fresh herbs if using, and serve hot with crusty bread.

Notes

  • Dark meat turkey is recommended for deeper flavor.
  • Homemade stock can enhance the soup’s taste.
  • If you prefer a thicker soup, mash some of the cooked wild rice against the side of the pot and stir it into the soup.
