- 4 ripe bananas, mashed
- 4 cups day-old bread, cubed (preferably brioche or challah)
- 2 cups whole milk
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup chopped walnuts or pecans (optional)
- Whipped cream or ice cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, add the cubed bread. Set aside.
- In another bowl, whisk together the mashed bananas, milk, eggs, sugar, vanilla extract, cinnamon, and salt until well combined.
- Pour the wet mixture over the bread cubes. Gently fold until the bread is fully soaked and combined.
- If using, fold in the chopped walnuts or pecans for added texture and flavor.
- Pour the mixture into the greased baking dish, spreading it evenly.
- Place in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for about 10-15 minutes before serving.
- Cut into squares and serve warm, with whipped cream or a scoop of ice cream if desired.
