- 2 to 3 slices sourdough bread, torn into pieces
- 1 tablespoon unsalted butter
- 10 to 12 cups chopped romaine lettuce
- Kosher salt and black pepper, to taste
- 1/3 cup finely grated Parmesan cheese
- 1/3 cup shaved Parmesan cheese
- 12 ounces cheese tortellini, cooked according to package directions
- 4 cloves garlic, minced
- 3 tablespoons plain Greek yogurt
- 2 tablespoons Parmesan cheese
- 1 tablespoon Dijon mustard
- 2 teaspoons red wine vinegar
- 1 teaspoon anchovy paste
- Juice of 1/2 lemon
- 1/3 cup olive oil
Instructions
- Melt the unsalted butter in a skillet over medium heat. Add the torn sourdough pieces with a pinch of salt. Cook, tossing frequently, until the sourdough is golden brown, toasty, and crisp. Remove from heat and set aside.
- In a small bowl, combine the minced garlic, Greek yogurt, 2 tablespoons Parmesan cheese, Dijon mustard, red wine vinegar, anchovy paste, and lemon juice. Whisk well to combine all ingredients. Slowly drizzle in the olive oil while continuously whisking until the dressing is emulsified and smooth.
- Place the chopped romaine lettuce in a large mixing bowl. Season with a generous pinch of kosher salt and black pepper. Drizzle a few tablespoons of the prepared Caesar dressing over the lettuce, then add the finely grated Parmesan cheese. Toss thoroughly until the lettuce is evenly coated. Gently add the cooked tortellini and toss carefully to avoid smashing the pasta. Add more dressing if desired, ensuring all ingredients are well combined and coated.
- Transfer the salad to a serving platter or individual bowls. Garnish with the reserved shaved Parmesan cheese and the crispy sourdough croutons. Serve immediately with additional Caesar dressing and Parmesan cheese on the side.
