- About 24 ladyfingers (Savoiardi preferred)
- 1 cup (240ml) strong espresso or coffee, cooled
- 16 oz (450g) mascarpone cheese, full-fat
- 1 cup (240ml) heavy cream
- ¾ cup (150g) granulated sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
- Optional: 2 tablespoons coffee liqueur (e.g., Kahlúa)
Instructions
- Prepare the coffee soak: Brew 1 cup (240ml) strong espresso or coffee and let it cool to room temperature. Stir in 2 tablespoons of coffee liqueur if using. Pour into a shallow bowl for dipping ladyfingers.
- Make the mascarpone filling: If using raw eggs, whisk 4 large egg yolks with ¾ cup sugar until pale and creamy (about 3 minutes). For safety, cook yolks and sugar over a double boiler until thickened and 160°F (71°C), then cool. Fold in 16 oz mascarpone cheese and 1 teaspoon vanilla extract until smooth.
- Whip the cream: In a separate bowl, whip 1 cup heavy cream until soft peaks form.
- Combine filling: Gently fold the whipped cream into the mascarpone mixture using a spatula to keep it light and airy.
- Assemble the tiramisu cake: Quickly dip each ladyfinger into the coffee mixture for 1-2 seconds per side. Layer soaked ladyfingers in an 8×8-inch dish. Spread half the mascarpone filling over them. Add another layer of dipped ladyfingers and spread the remaining filling. Smooth the top, cover with plastic wrap, and chill in the refrigerator for at least 6 hours or overnight.
- Before serving, sift a generous layer of cocoa powder over the top.
