- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 egg yolk
- 1 tsp vanilla extract
- 1/2 cup of your favorite jam (raspberry, strawberry, or apricot)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and sugar until light and fluffy (about 2 minutes).
- Mix in the egg yolk and vanilla extract until well combined.
- Gradually add the flour until just combined; be careful not to overmix.
- Scoop tablespoons of dough, roll into balls, and place them on the baking sheet spaced two inches apart.
- Press your thumb into the center of each ball to create an indentation; fill with about half a teaspoon of jam.
- Bake for 12-15 minutes or until golden around the edges. Let cool before serving.
