Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the grated zucchini, sweet corn, and shredded cheese.
- In another bowl, whisk together the eggs, flour, baking powder, salt, and pepper until smooth.
- Pour the egg mixture into the zucchini mixture and stir until well combined.
- Fold in the chopped herbs.
- Pour the mixture into a greased pie dish.
- Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
- Let it cool slightly before slicing and serving.
