- 1 pre-made pie crust
- 2 cups mixed summer vegetables (zucchini, bell peppers, corn)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the mixed summer vegetables, ricotta cheese, mozzarella cheese, eggs, basil, salt, and pepper.
- Pour the vegetable mixture into the pre-made pie crust.
- Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
