Ingredients

  • 1 pre-made pie crust
  • 2 cups mixed summer vegetables (zucchini, bell peppers, corn)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the mixed summer vegetables, ricotta cheese, mozzarella cheese, eggs, basil, salt, and pepper.
  3. Pour the vegetable mixture into the pre-made pie crust.
  4. Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
  5. Let it cool for a few minutes before slicing and serving.
