Instructions
- Preheat oven to 325°F (165°C).
- Combine graham cracker crumbs and melted butter. Press firmly into the bottom and sides of a 9-inch springform pan. Chill crust while preparing filling.
- Beat softened cream cheese until smooth. Add granulated sugar and vanilla extract, mixing until well combined.
- Add eggs one at a time, mixing just until incorporated after each addition.
- Stir in sour cream, pumpkin puree, and pumpkin pie spice until smooth and lump-free.
- Pour the pumpkin cheesecake filling over the chilled crust. Smooth the top with a spatula.
- Bake for 50-60 minutes, or until the edges are set and the center has a slight jiggle.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from oven and let cool completely at room temperature.
- Refrigerate for at least 4 hours, or preferably overnight, before serving.
