- 1 ½ pounds fresh green beans, trimmed and cut into 2-inch pieces
- 3 tablespoons unsalted butter
- 1 small yellow onion, finely chopped
- 2 garlic cloves, minced
- 8 ounces cremini mushrooms, sliced
- 3 tablespoons all-purpose flour
- 1 cup chicken broth or vegetable broth
- 1 cup half-and-half
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon ground nutmeg
- 1 large yellow onion, thinly sliced
- ½ cup buttermilk
- ½ cup all-purpose flour
- ¼ cup cornstarch
- ½ teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Blanch the green beans: Bring a large pot of salted water to a boil. Add green beans and cook for 5-6 minutes until tender-crisp. Drain and transfer to ice water.
- Make the mushroom cream sauce: Melt butter in a skillet over medium heat. Cook chopped onion until softened. Add garlic and cook for 1 minute. Add mushrooms and cook until browned. Stir in flour for 1 minute. Whisk in broth and half-and-half. Add salt, pepper, and nutmeg. Simmer until thickened.
- Assemble the casserole: Preheat oven to 375°F (190°C). Combine blanched green beans with mushroom cream sauce in a large bowl. Transfer to a baking dish.
- Fry the onion topping: Soak sliced onions in buttermilk for 10 minutes. Mix flour, cornstarch, paprika, salt, and pepper in a separate bowl. Heat vegetable oil in a saucepan. Toss soaked onions in flour mixture and fry in batches until golden brown and crisp. Drain on paper towels.
- Bake and finish: Cover the casserole with foil and bake for 25 minutes. Remove foil, top with fried onions, and bake for another 10 minutes until golden and bubbling. Let rest for 5 minutes before serving.
Notes
- For a vegetarian version, use vegetable broth instead of chicken broth.
- Nutmeg is optional but recommended for added flavor.
- If using store-bought crispy onions, sprinkle them on top before baking the second time.
