- 1 tbsp freshly ground black pepper
- 1 tbsp garlic powder
- 4 cups chicken broth
- 4 cups diced bread (day-old)
- 1 cup diced celery
- 1 cup diced yellow onion
- 1/2 cup dried cranberries
- 4 large russet potatoes
- 1/2 cup whole milk
- 2 tbsp sour cream
- 1 lb fresh green beans
- 1 can cream of mushroom soup
- 1 cup crispy fried onions
- 1 pie crust
- 1 can pumpkin puree
- 1 can evaporated milk
- 2 eggs
- 1/2 cup brown sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 325°F.
- Pat turkey dry. Rub with softened butter. Season generously with salt, pepper, and garlic powder.
- Place turkey breast-side up in roasting pan. Pour chicken broth around the bottom.
- Roast uncovered for 3-4 hours (for a 12-15 lb turkey), basting every 30 minutes. Turkey is done when it reaches 165°F in the thickest part of the thigh.
- Tent turkey with foil and let it rest at least 20 minutes before carving.
- While turkey roasts, melt butter in a skillet over medium heat. Add diced onions and celery, cooking until soft (about 5 minutes).
- Toss sautéed vegetables with bread cubes and cranberries in a large bowl.
- Transfer stuffing mixture to a buttered baking dish and bake at 350°F for about 30 minutes, until golden and crispy.
- For mashed potatoes, boil peeled potatoes until fork-tender. Drain well.
- Mash potatoes with warm milk, sour cream, and butter. Season with salt and pepper to taste.
- For green bean casserole, mix trimmed green beans with cream of mushroom soup. Spread in a baking dish and bake at 350°F for 25 minutes.
- Top green bean casserole with crispy fried onions during the last 5 minutes of baking.
- For pumpkin pie, whisk together pumpkin puree, evaporated milk, eggs, brown sugar, and cinnamon until smooth.
- Pour pumpkin pie filling into pie crust. Bake at 425°F for 15 minutes, then reduce oven temperature to 350°F and bake for another 40 minutes.
- Serve all dishes warm.
Notes
- Thaw turkey in the refrigerator for 2-3 days before cooking.
- Use a meat thermometer to ensure turkey reaches 165°F.
- Prepare some dishes a day ahead to save time.
- Adjust seasoning to taste.
- For gluten-free, use cornbread for stuffing and gluten-free flour for pie crust.
- For dairy-free, swap butter for olive oil and use coconut milk in mashed potatoes.
- Vegetarians can enjoy a wild mushroom stuffing as an alternative.
