  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the trimmed green beans with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Roast the green beans for about 20 minutes, shaking the pan halfway through, until they are crisp-tender with caramelized spots.
  4. While the green beans roast, melt the butter in a medium saucepan over medium heat.
  5. Stir in the brown sugar until dissolved, then add the cranberries.
  6. Cook, stirring occasionally, for 5-7 minutes until the sauce thickens slightly and the cranberries burst.
  7. Prepare mashed potatoes by boiling peeled, cubed potatoes until fork-tender, draining them well, and mashing with butter. Season with salt and pepper. Add warm milk or broth if needed for a fluffy consistency.
  8. Serve all three Thanksgiving side dishes warm.

Notes

  • Adjust seasoning to taste.
  • Fresh cranberries are recommended, but frozen or dried cranberries can be substituted. If using dried, soak them in hot water for 10 minutes first and reduce the brown sugar by half.
  • For dairy-free options, vegan butter or refined coconut oil can be used instead of butter.
  • If russet potatoes are unavailable, Yukon Golds or red potatoes can be used for mashed potatoes.
