- 2 tablespoons Red Curry Paste
- 2 tablespoons Fish Sauce
- 2 tablespoons Lime Juice
- 2 pounds Pork Ribs (Baby Back or Spare)
- 1/2 cup Roasted Peanuts (Chopped)
- 1/4 cup Cilantro (Chopped)
Instructions
- In a large bowl, mix together sweet chili sauce, red curry paste, fish sauce, and lime juice. Generously coat the ribs with this flavorful marinade, cover, and refrigerate overnight.
- Combine sweet chili sauce, creamy peanut butter, red curry paste, fish sauce, and lime juice in a saucepan. Heat over medium heat, stirring until smooth, about 2-3 minutes.
- Place the marinated ribs in your slow cooker, arranging them vertically if possible. Set to low and cook for 6-8 hours.
- Preheat your broiler. Transfer ribs to a baking sheet, brush with half of the prepared BBQ sauce, and broil for 3-5 minutes.
- Sprinkle the finished ribs with chopped roasted peanuts and fresh cilantro. Serve remaining BBQ sauce on the side.
Notes
- Feel free to swap sweet chili sauce with any sweet BBQ sauce if needed.
- Adjust red curry paste for less spice.
- Use soy sauce for a gluten-free option.
- Rice vinegar can substitute lime juice if necessary.
