- 1 cup diced vegetables (Like bell peppers or onions, optional.)

Instructions
- Start by preparing all your ingredients. Take the bag of frozen tater tots out of the freezer to let them thaw slightly.
- Preheat your oven to 375°F (190°C).
- In a large bowl, add the eggs and milk. Season with salt and pepper and whisk until light and frothy.
- Grease a 9×13 inch baking dish with cooking spray or butter.
- Spread the thawed tater tots evenly across the bottom of the greased baking dish.
- Sprinkle diced vegetables over the tater tots, if using.
- Distribute cooked and crumbled sausage or bacon over the vegetables.
- Pour the egg and milk mixture evenly over the top.
- Top with shredded cheese.
- Place the baking dish in the preheated oven and bake for 30-35 minutes, until the eggs are set and the cheese is golden.
