- 2 boneless skinless chicken breasts
- 12 ounces fettuccine
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese
- 4 ounces cream cheese, softened
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped parsley
Instructions
- Place the chicken breasts in the Instant Pot and season with salt and black pepper.
- Add the butter, minced garlic, and chicken broth to the pot.
- Break the fettuccine in half and lay it over the liquid in a crisscross pattern.
- Seal the lid and cook on high pressure for 8 minutes.
- Let the pressure naturally release for 5 minutes, then carefully quick release the remaining pressure.
- Remove the chicken and shred it or slice it into bite-sized pieces.
- Turn the Instant Pot to sauté on low and stir in the heavy cream, cream cheese, and Parmesan cheese until smooth.
- Return the chicken to the pot and toss everything together until the pasta is fully coated.
- Add chopped parsley, then serve hot with extra Parmesan if desired.
