Description

These air-fryer elote eggs are marinated in savory Asian sauces and finished with elote seasoning for bold, umami-packed flavor. This is a better way to enjoy hard-boiled eggs; it’s perfect for meal prep or can be enjoyed as a high-protein snack.


Ingredients

  • 9 large eggs
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 11/2 teaspoons fish sauce
  • 11/2 teaspoons sugar
  • 11/2 teaspoons lime juice
  • 50 milliliters water
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • Optional: Fresh cilantro leaves, lime wedges, grated Parmesan, scallion oil

Instructions

  1. Place eggs in a single layer in a large saucepan; add enough cold water to cover by 1 in. Cover and quickly bring to a boil. Remove pan from the heat. Let stand for 15 minutes for large eggs (18 minutes for extra-large eggs and 12 minutes for medium eggs).
  2. Rinse eggs in cold water and place in ice water until completely cooled; drain. Peel eggs. Using a sharp knife, make 4 vertical slits along each egg, about 1/4-in. deep.
  3. In a large bowl, combine oyster sauce, soy sauce, fish sauce, sugar, lime juice and water. Place eggs into marinade for 10 minutes.
  4. Meanwhile, in a small bowl, combine chili powder, paprika, oregano, cumin, garlic powder, onion powder and salt; set aside.
  5. Preheat air fryer to 300°. Cook eggs for 7 minutes. Toss eggs with spice blend; cook 7 minutes longer. Remove from basket to serving dish. Let cool slightly before garnishing as desired with fresh cilantro leaves, lime wedges, grated Parmesan and scallion oil.
